1 two kilogram cat
1/4 cup of vinegar
1 head of garlic
4 small onions
1 carrot
1 sprig of thyme
100 grams of lard
6 cloves of garlic
1 tablespoon of flour
1 cup of white wine
1 cup of water
2 handfuls of chopped parsley
1/2 kilogram of potatoes
1/4 liter of olive oil
Preparation: 35 minutes
Cooking time: 50 minutes
Skin the cat like if it was a rabbit. Wash it well and dry it with a towel.
Cut into pieces, separate the liver and heart.
Place all of the pieces into a pot together with the cup of vinegar, diced head of garlic, and the sprig of thyme; let sit for two days.
Take out the pieces of cat using a cloth. Season with salt.
Heat up a frying pan until hot and place in the lard. Fry the pieces of cat. After they have been well-cooked, take them out using a skimmer.
Add in diced onions, the carrot, diced garlic, and the oil.
Cover the pan and lower the heat, cooking slowly.
Turn and move everything in the pan on occasion. After 15 minutes of cooking, add diced liver and heart and allow to cook slowly for another 15 minutes. Once everything is almost tender, add flour and mix. Afterwards, add white wine and the water used to skin the potatoes, and the fried pieces of cat. Allow everything to boil until tender. Add diced parsley 5 minutes before serving.
