You seem like the best folks to ask and this has been tickling my pickle for a while.

So let's say you have a fruit like a pepper, but anything with an air cavity works. What is the "air" that's inside it before you cut it open? Would it be the same ratio of gasses of the ambient atmosphere or something different?
