Mathematically speaking, what is a manifold? Is it a shape? Like different kinds of Calabi-Yaus? Or are they algebraic surfaces and shapes that follow the textbook definition(axioms?) of a manifold

I don't think you are educated enough to get the "mathematically speaking" answer.
A locally Euclidean topological space is as good as it gets without retorting to some popsci bullshit. More handwavy is saying it's a generalisation of curves and surfaces to higher dimensions.

I started off with a graduate textbook that I couldn't read at all and learned backwards, letting me set up my own goals and requirements instead of being hand fed a shitty linear chart.
