When they say that gravity in GR isn't a real force, what they mean is that gravitational effects can be made to vanish locally, i.e., that a small enough body can't be unambiguously determined to be under any gravitational influence. However, gravitational effects cannot be made to vanish globally. Curvature of spacetime is in many ways unambiguous globally, and forms a true field in spacetime.
