As I understand it Bell's experiment doesn't completely rule out hidden variables it just means that if they exist they must be non-local.

What's so bad about that? Maybe the hidden variables simply exist outside of spacetime. That's a lot more reasonable than observation "creating reality" or bazillions of parallel universes.

If we suppose that they exist "outside" of spacetime, how can we experimentally check if that's true or not? We live in spacetime, so we cannot really measure something that exists outside of it, we can't even know if something exists outside of spacetime. So this hypothesis is really not scientific. What's the difference between having hidden variables in a place that doesn't make sense to talk about and not having hidden variables in the first place?

It's a distinct possibility that we're not privy to the entire workings of physical interaction. That doesn't mean you just give up, but until we figure out an explanation that isn't equally troubling, it should at least be a humored point of view.

Bell's theorem is about what happens when you use Pauli matrices as spin operators,it has no application beyond the axiom there does not and never will exist a better algebraic structure with which to describe half-integer spin. In a way, Bell's theorem almost precludes the existence of local hidden variables before it starts because there might be a better spin operator that is the derivative operator with the respect to the local hidden variable, and then we would have different eigenfunctions for the spin operator than we do when we use the Pauli matrices.
