How are multiplexers and encoders different from each other? They both take 2^n inputs and give n outputs. What is the difference?

structurally they are the same really, you could say a multiplexer is a form of encoder

a multiplexer's output is one of the inputs which is selected by the selector inputs
an encoder's output, on the other hand, is based upon the selector inputs themselves

Nope. An encoder has discrete inputs encoded into a binary or BCD output. A multiplexer selects a data bit input and routes it to a data bit output.
