That's a sweet tooth mushroom, which like many of the world's most delicious fungi, is mycorrhizal.
>>11155371The reason why we barely farm mycorrhizal fungi boils down to the fact that there is not enough of a demand for gourmet choice edibles. Mushroom hunting is rather niche. Truffles are in relatively high demand with decreasing wild yields, so people are just figuring out how to farm them by inoculating nurseries of host trees and waiting a decade for them to start producing. It's rather rudimentary, but the complex relationship between the fungi and their plant friends takes a very long time and we currently don't know how to expedite its development. If there was as much economic incentive behind it as say, lab grown meat, I have no doubt that we'd be sustainably farming matsutake, chanterelles, truffles, sweettooth, etc.
