What is the scientific consensus on biological sex as a spectrum? SciShow released a video today that looking at differences of sexual development. Is this the common view amongst biologists or is he spreading propaganda?

Yes, there are pathologies that can result in ambiguous genitalia, or other disorders of sexual development (that doesn't mean "gender" means anything though). But that doesn't mean there are more than 2 human sexes, because anything that deviates from the norm is recognized as a pathology, associated with a disorder in some gene or in cellular development and expression. In the same way, you would not say someone with cystic fibrosis has a different type of physiological lungs and pancreas, they have a defective version of the normal set of lungs and pancreas (and other stuff), due to a mutation in a gene.

It's gametes that determine sex. Not organs or chromosome quantity. To be more precise it is the fertile gametes. For example if your sperm is infertile or you have reached menopause or got your ovaries removed, you are basically not a male or female. Just a human being, what sex you have been assigned doesn't really matter to anybody.

Humans evolved for their phenotypical traits - that is: fully male and fully female bodies.
The outliers of this fact exhibit disabilities in one way or another. The video you linked admits as much, albeit without making too much of a point of it.
