Can someone explain to me what's going on in my brain when I intuitively know something? Like, I was just helping a friend learn how to dogfight in IL2: Battle of Stalingrad, and I noticed that while I always knew what to do, I couldn't explain how I came to those conclusions.

What's going on here? How can I know something well enough to act on it, but not well enough to explain it?

This. Language is more like painting an outline of a picture in another's mind so they can fill it in and understand the details. It relies on shared understanding and thinking not just in the sense of knowing the same words/language. In some cultures/languages even more so.

Have you tried sitting down and writing a description of the gameplay? (Or voice dictation if that's easier).
I find if I'm familiar with a game level I can describe it in quite a bit of detail.
