The only thing you want to note is the solutions of the exercises so that you can read them before the exam.
If you actually wanna learn math, just read a good textbook. The proffesor's lectures is an optional complement.

Taking notes only work for exceptions or NB, or when you have some doubt. If you can't understand what you doing/how to do your problems you're basically fucked.

The traditional answer would be that taking notes just helps you memorize the content better. Writing down a definition multiple times and in a way that you know how to reference easier than a textbook, for instance. In simpler classes (like, undergrad intro level classes), learning proof techniques you have to apply multiple times it helps commit those to memory.

Write down whatever is not in the textbook (if you are in pure math, you should read everything in advance) or what you struggled with the most when you read it (some transition in a proof). The lecturer might also share some insight or motivational bits that are often omitted from written texts.
By hand obviously, anything typed is a waste of time.
