If humans managed to create an event energetic enough to trigger the vaccuum to dip to a lower rest energy, the result would be a sphere which emanates out at the speed of light from the source of the event. The sphere would destroy everything in its wake, literally everything. Nobody would see it coming, because it would be coming at the speed of light. The entire universe would be erased and replaced with a universe that has a lower vacuum energy.
Chances are that won't happen though. There are catastrophically energetic events happening in the universe all the time, and it hasn't happened yet. Humans would literally have to create something more energetic than anything that currently exists in the universe, at the very least.
