I'm reading this journal entry about a nutritional analysis of sea cucumbers, and I'm noticing that all the numbers reported add up to more than 100%. Just water and protein content alone add up to over 100. What gives? Am I reading these charts wrong? This thing is peer-reviewed, so it has to be me who is wrong
