Violet doesn't exist and is not seen in a rainbow claims this video

That's also why the sky appears blue despite the fact that violet light would be scattered most aggressively out of the visible spectrum. Our eyes just aren't as sensitive to it as they are to blue light.

What do you mean by "create violet"? All that matters is my brain sees violet even if the actual wavelength isn't produced. A display can show me every hue between red and blue right?

Yes, but violet comes after blue. It looks different from purple in real life.
Stare at something yellow and then look at a grey area, you should see a violet afterimage.

The violet referred to in the rainbow, looks like a darker blue, not purple. Purple is a combination of light from the blue end of the spectrum and the violet end of the spectrum.
The reason you can sometimes see purple in a rainbow is because there is a much fainter second rainbow below the more prominent one, and the red light from the fainter rainbow mixes with the (blue looking) violet of the more prominent rainbow.

So are you just saying in that particular image violet isn't produced? I thought anywhere you had a smooth gradient from blue to red violet is pretty likely?

Here's a gradient I made that's pure red that blends to pure blue. Of course our monitors only display the wavelengths for red or blue, and as the gradient goes across the luminance of the blue and red LEDs reverse. Your brain creates all the intermediate colors.

This is why "computer displays can't create violet" seems like a irrelevant statement to me. By that standard they can only create 3 colors despite the fact that we ultimately see millions. All that matters is the camera knows it's looking at violet and assigns the right value to the pixel to later be approximated on your screen with 2 colors of LEDs.

He's probably right about the rainbow violet being mostly blue+red from secondary rainbow.
But still, light around 400nm is violet, as in "sort of purple-ish blue".
Human eye can't see it super well, mainly because atmosphere blocks/scatters part of that blue spectrum (which is the reason why sky is blue). We aren't evolved to see it, which is a reason why violet LEDs look dim, sickly and you can't read under them.
Because atmosphere cuts chunk of the spectrum, you can only barely see it from diffracted sunlight, which is why it may appear only dark blue.
