For digestive enzymes, if it doesn't have teeth or any way to physically turn a human into a mush then it would have to produce them in massive quantities and probably stronger than anything nature has. Maybe look into spiders and fungal digestive enzymes. We munch our food before digestion so it has much more surface area and the enzymes can work quicker, without it it would be very hard to process food at our scale.
A blob wouldn't be really strong, unless it could spontaneously form lever - like structures from its cells, then maybe. Like an extremely fast myogenesis. Impossible with current technology.
All of this would have to be controlled in some way. It would need a nervous system that can constantly adapt to structures appearing and disappearing and control it as well. Probably won't be ever possible.
Your best bet is hiring a movie crew and making a movie or hibernating yourself and hoping someone will wake you up in 20 000 years in the golden age of technology. That, or waking up in 40 000 and getting immediately burned alive, you heretic scum.
