why is there no trust in the math field?
it's always "prove this" or "prove that"
can't we just take it on faith that the person writing the formula probably knows what they're doing?

Because just accepting something from someone simply because he was correct previously is a fallacy. What if he was mistaken? What if part of his bias influences his solution? There's no way to know that without testing his solutions and proof.

Also, how did he become trusted? By passing tests of his previous proofs. So if there's a rigorous way of testing his proofs that works, then why abandon it? Why not just keep asking for proofs to test so that everything is verified. That way more results are more reliable.

It's the opposite actually. Professional papers are full of orphaned citations and appeals to "the literature," and if you're not a seasoned researcher you basically have to take them on faith.
