Most will be just as a hobby, like Fermat and Pascal used to do. The first 4 will be my focus, I believe it's not such an impossible aim to have...

I'm currently studying quantum mechanics and physics, it's pretty hard and the math is heavy. I can't imagine doing all those things, it's definitely possible though.

"Specializing" in different subjects sounds a bit ambitious, but I think I like all areas of math to some extent.
Several Complex Variables is not a subject in the way the others are, although there's differential geometry with complex dimension etc.

Yours topics are nice, even if Analytic Number Theory kind of sticks out from the others (as most far away from the others).
Same may be true from complexity theory, depending on what interests you in logic.

Sounds like you'd want to know more about e.g. stochastic differential equations to bringe gaps from your list, for QFT (if you mean it like it's used in physics).

OT: it honestly sounds like you have very little knowledge about the topics you listed. Study them first (and other ones) and then decide what you want to focus on (you will also then notice that you need to specialize a lot more than you think).

I see, and what are the prerequisites for complex geometry? Some guy on /mg/ said algebraic topology was extremely important in that area, that's why I listed it on the topics I have an interest in studying about.

What courses have you heard already? Which do you plan on taking regardless? Its fine to be enthusiastic about a topic, but I don't think you should limit yourself because of it.

For complex geometry, basic abstract algebra, complex analysis, and diff geo seem to be useful (topology, category theory and algebraic geometry in general too). I dont really now myself, only worked through like 50 pages of Huybrechts, so take everything i say with a spoon of salt.
Maybe just take a look at Huybrechts Complex geometry and see if that is what you are looking for. If you are more into the analytic side something like this https://www.jirka.org/scv/scv.pdf
