You could engineer a plant to create and store meat-type proteins as well as supply defenses to help protect the storage area from infections, insects, etc. There's no real point to do that though. Your body doesn't really care what the original source of its nutrients are. A better solution would be to have plants that can grow larger in a shorter amount of time, giving you more complete nutrition in a single serving of the plant.
