In my interviews, obviously I made sure to perform well, but if I got stuck I steered it as best as possible that it looked like the 'hints' they gave were taking effect (one thing they look for is 'teachability', i.e. even if you don't get it at first, can you get it quickly with some minor hints?) In a couple of the interviews, they had some simple props, and I couldn't work out the solution, and played with the props with an inquisitive look on my face. I had already answered some questions by that point though so maybe just a good stall tactic if you are nearing the end.
