How would you apply mathematical/statistical modeling to make the most money?

I recently read this (https://www.bloomberg.com/news/features/2018-05-03/the-gambler-who-cracked-the-horse-racing-code) article about a man who won almost a billion dollars from horse betting by using computational/statistical models which weighed fundamental factors to predict race outcomes. I've had the lurking pipe dream of becoming a quant for a while now, but holy fuck this has me obsessed with stats/maths in betting/financial markets.

***My question is, what is the best way to make money using statistics and mathematical/computational modeling? In particular, what are some untapped (betting) markets?***

Horse racing's hay-day is over since many people have started copying Benter's methods, causing wild fluctuations in betting odds just before the race. Traditional financial markets seem too noisy/stochastic, and the barrier to entry to fundamental trading seems too high. So what's the next gold mine?
