I don't think your body fights the bacteria that cause food poisoning in the same way it fights an infection.
After you eat them they cause chaos in your digestive system and the body yeets them out by vomiting or diarrhea.
Your actual immune system doesn't get involved unless things get really bad.

To be fair it does provide tolerance to some small extent, provided your body can combat it in the first place. You'll have antibodies ready more quickly if you already had to make it before I believe.
