honey is literally just sugar
the reason it tastes and smells different from sugar is because bees take nectar and eat it then they vomit it into the beehive
yes, honey is bee vomit and the taste is determined by what flowers the bee gets its nectar from before it vomits it

I've analysed honey using Gas chromatography-mass spectroscopy and the volatiles are about 30-40 diffetent molecules including but not limited to tarpenes, alcohols and long chain aldehydes
