Combinatorics seems pretty promising, there are plenty of open problems that you can solve (or at least make progress on) just by writing down a nice function.

By the same token, I suppose computability theory and computational complexity theory are, in principle, open to amateurs as well -- progress is marked by clever existential constructions, rather than proving universally valid conjectures.
