If we include things that aren't models of the real world in the term then it just means "any virtual environment." There are thousands of types of virtual environments that have nothing at all to do with modeling the real world. If we're a big game in some alien type of universe, then we're not a simulation OF that universe. The main two types of simulation we would be in was one created by aliens or one running in our future. Since we can't seem to see stars well enough to simulate alien worlds, that means that either they can't simulate us, or they can, but they run a simulation specifically for the purpose of testing the assumption of how we'd behave if we couldn't see/simulate them back. If we're running in our future, then it was probably our descendants that decided to do it because they wanted to better understand their ancestors. The idea that we'll eventually be given forms in the real world is misleading in all cases. Scarcity can only increase if entropy continues to increase without tech to change the equation. They'd likely just end up giving rights to living portraits and be done with it.
Those are the three main scenarios. There's not a whole lot of reason to ever assume anything else. If you're being simulated, it's because the real you already exists. So no, you aren't a simulant at the real moment that this might be an echo of.
