First life on Earth did not breathe oxygene, since there wasn't any in the atmosphere, later it learnt to do so. Life tunes itself to Universe, it's called adaptarion.
As to the Universe being tuned... We lack the data of how wide is the Universe. It very well might be so that the laws of physics that we know are only local. Location being our space-time bubble. Actually 3 spatial dimentions and one temporal already seem to be an odd setting that requires at least a couple o rerolls to get right.
Or it might be so that god knew exactly what he wanted to achieve when creating the simulation.
The idea, that "there is only this world we see and it is the way it is because that is how it is and it couldn't be otherwise, stop daydreaming!" is the worst explanation ever. Antiscientific I'd say, since it blocks any path to understanding more. Judging by our past, what are the odds there is so much other shit we don't know about? On whose side is the Ockham's razor?
