There is no "adaption", it's just casuality. Lemme explain:
>Black people goes to north>suddenly due to a random mutation his skin turns white>can he still reproduce?>if yes than this trait might be transmitted to further generations>does he reproduce more than the ones with black skin?>if yes than this trait will eventually become the most relevant in that place.There's no adaption like "wait, now that i'm in north i need more vitamin D so my body knows it and automatically turns his skin to white", No!
If it wasn't for a random mutation we could still be all black.
As far as we know it could also have happened sonething like this:
