Why are people always trying to bunch the history of chemistry all the way to metallurgy in the classical era?

I mean, alchemists boiling their fucking pee had at least some initiative or something, but that was mostly luck.

Chemistry only existed in the 1800's. Before that it was nothing but luck and philosophers coming up with shit like "Phlogiston", and after that physicist came over and ruined all the fun by making their models better.
