Part of the underlying assumption makes sense -- if space is infinite, and if it has stars scattered all through it, then eventually any line of sight would end in the surface of a star.

But, you know, attenuation, and red-shifting, and some things are too far away for the light to have gotten to us yet in an "infinite" universe, and all that.

Well there is a difference between the universe and all of existence. the universe is continuously expanding, so that means there is some nothing out there that stuff is expanding into. Also >>10913894

Well, it is an old as fuck theory of how the universe, or Earth, would end with a flash that would kill us all. This was particularly prevalent when we thought that the universe was eternal.

This was actually a established physics problem called Olber's paradox.
The solution is the fact that the universe had a start date so some of the light from distant stars are still taking their time getting here

That is what Im saying, the universe of "stuff" is finite, or else everywhere would be filled with something, but things are getting further from other things, therefor there is a void, meaning the absence of stuff. Is the abscence of both matter and energy considered part of the universe?

When NASA zoomed on that "black" part of the sky (where you can't see any stars) they saw there lots of galaxies.
All what you can see with your bare eyes on the sky is only the stars from the Milky Way.

The universe is finite. If you pick a direction that manages to miss every star, your line of site will eventually reach something called "the dark ages" - this is a point in time where stars had not formed yet, and the universe was opaque from dense hydrogen gas. Hence it is black.

There are stars who's light will never reach us. But even that area is not infinite. The universe is a hyper(sphere?) with finite volume.

Cosmic background radiation is the "white" you're looking for.

Light we can perceive with our eyes is a tiny fraction of light there is. On top of that, the universe is expanding faster than the speed of light, so past a certain point light can no longer reach us.
