I read on the internet that someone who allegedly holds a PhD in biology says there are in fact infinitely many sexes. Can you explain why they might believe that and why they are wrong?

Sex is a phenotype determined by sex chromosomes. XY, XXY, XXXY are male, and X, XX, XXX, XXXX are female. I'm not sure about how intersex comes about, so I can't comment, but I'm sure it would have something to do with their genetic make-up.
This PhD has clearly defined "sex" differently, so they are not necessarily wrong from this explanation.

Under current social trends around gender identity, gender is viewed as a spectrum with society's preconceptions of what makes a prototypical male on one end and what makes a prototypical female on the other. This is where they get the "infinitely many" from.

Biology at the genetic level does not care about gender identity, gender identity is a sociological issue.

Casually, we used to only recognize 2 sexes with the occasional trans/gay in there. However scientifically speaking, there's tons but they're not all equally represented in population. Almost all are rare/very rare.
