>>10899181well, for one, they also notate dynamics (loud/soft would translate to acoustic amplitude) and tempo/time signature (which has no easy acoustical word). they also denote chords which would be some fourier decomposition of complex waveforms. they also denote which instruments/voices do which notes which corresponds to selecting timbres/overtone profiles. and if there are lyrics then it is a dynamical modulation of timbre, same thing with how some scores denote how a note should be played on instruments like a guitar or a violin where one might place the same note in different ways (same note on either of two strings, or how one articulates the note like e.g. bending or adding vibrato or plucking vs bowing)
in other words, music notation is much more elaborate
