so you have build the apparatus to do fluid dynamics and document the phenomena, we dont know mathmatically clearly whats going on and so cant simulate.

Pretty much this
That's why we depend on dimensionless numbers like Prandtl, Reynolds, Froude...mixed up in experimental formulas to get real solutions

also they are useful for neglecting Navier-Stokes equation terms. kek, now I remember the professor erasing the whole momentum equation to end up just with the viscosity term

Yeah until someone figures out turbulence, and the fluid engineers go hog wild. Materials scientists have their work cut out for them. Handouts from the physicists. Best physicists in the world can't figure out turbulence yet.
