The reason is these topics involve way more retarded little details than any human or human made machine will ever bother reproducing in their entirety.
Which is fine for most everything we use technology / science for in practice, but for questions requiring very high fidelity of tiny little details massively many in number like weather prediction or reproducing the conditions of every single molecule on the planet for the past billion years or so (something we can't even do for a single second of the entire planet's molecular configurations let alone billions of years) you're not going to make it.
You can build an extremely oversimplified abstract model of how it would work, but at that point what I'm really saying is "you can do what Darwin already did and others since heavily refined into modern biology."
