Are there any benefits of having an Engineering degree besides the obvious access to engineering jobs/projects?
It's not that I don't like it, but If at the end of road there's a boring office job it just feels like it is a waste of time and energy. Are there any benefits at all? How is this a good time investment?

its not what you think. you're almost certainly end up some kind of project manager. go to meetings, make spreadsheets, go beg suits for money, etc

techs do the hands on work, pure dispiline phds do the research level stuff,

This is what professors do, on top of managing the students and researchers under them. They barely do any of the research or writing themselves. Life becomes more boring the more successful you become, generally.
