If you're not in the exact sciences you should know up until calculus so you at least have a basis to understand things like statistics. If that's not enough you can continue with analysis, then numerical methods if you plan on doing applied stuff. Save number theory for the easily formulated brain teasers.

aside from basics like fractions and percents...

systems of equations
very basic probability and stats
rates and maybe related rates
basic graphs
maybe something out of business like cost functions

They're not required but more like "nice to have" as you will run into them every now and then.
