Why can't we drink salt water? Did evolution just give up?

It seems to me the simplest path for evolution would be drinking salt water but humans can't drink it and almost no animals can either.
At the very least wouldn't more sea creatures be able to drink it? Why hasn't evolution solved this?

What the fuck are you talking about?
Whatever emerges and works OK enough to persist, does.
Evolution isn't a conscious planner and doesn't have an incentive to make features that would be nice to have.
Much of living conditions for the organisms on Earth throughout history have been horribly unpleasant and far less than ideal. That doesn't matter at all to natural selection. All that matters is whatever works OK enough that some portion of organisms with a given trait are surviving to reproductive age.
