i think the whole 'spacetime stretches on a 2-d surface' is dumb, there are galaxies 'on top' and 'below' ours. I think space-time stretches on a 3d way, as in a black hole collapses from all 3 directions, not as a sinkhole in space time.

basically pic related needs strings going up, and black hole pulling everything inside instead of sinking.

But twisting seems plausible too, I'd just say that the string goes into the point before crossing it, and then bounces back to being a straight line.
