Evolution is an end *result*, not a process.
Evolution happens when the organisms that didn't manage to survive die off, and the ones who did have the genes to survive in their environment are left behind.
So you have a group of organisms with a mix of bad and good genes, then the bad ones die out, leaving the good ones. Now the good ones multiply and make the 'good' more common over the population. What was once 'good' now becomes the new normal.
So in essence the 'average' of a species changes over time.
They key in evolution is the distinction between an organism surviving and dying out. There's no grand force that orchestrates this.
