The whole point of Adam being called a "mother" struck me mostly to serve a symbolic purpose than anything else, since the Freudian themes and drawing a parallel with the angels trying to "become one" with the body and the Children with the Evas and their mom's souls. The Seeds reproduce, but asexually, so trying to determine their "gender" means fuck all. Especially since they're technically aliens. The whole "Kaworu is actually female" meme was funny at first, but only when it wasn't serious and now it's just getting tiring.
Kaworu, Adam's human identity, is male. Anno actually insisted it. It's part of his thing to be the "ideal image" of Shinji.
