Stuff in the "Universal Century" timeline (shortened to UC), and "Alternate Universes", or "AUs" that are stand alone series.
In order to understand Gundam, personally I think you need to start with the original 1979 series.
There's the show, or 3 compilation movies if you're impatient.
The original series establishes all the tropes of the UC series and of AUs, so it's kind of a foundational or key work to understanding the rest of Gundam.
From the original show, you have the original UC timeline. As far as shipping goes, the original series has Char/Amuro, Char/Garma, Zeta Gundam has Kamille/Char,
>Gundam 79 > Zeta Gundam (in which Kamille first appears) > ZZ Gundam (with more Kamille) > Char's Counterattack (finale movie for the original 3 series)After Char's Counterattack there are a lot of nice OVAs set in the UC, then there's the F91 movie, Victory Gundam show, and Turn A Gundam show, which are "Late UC"
Turn A Gundam is actually so far removed in the timeline that it functions as a stand alone. You still need to see Gundam 79, but you could watch Turn A second. It actually has some nice gay stuff both in the show and in the context of its production (hired a renowned gay western artist to design some of the mecha).
As far as AUs, Gundam Wing is particularly fun and fujo oriented. Gundam 00 is also fujo-y. G Gundam has some cute guys. IBO is extremely fujo oriented and has some overt gay. You could go straight to any AU from Gundam 79.
Honorable mention to G no Reconguista which is kind of an outlier in that people aren't sure where it fits on the timeline, and has Bellri Zenam, who I see as a Kamille successor.
