The pink and brown cows are actually supposed to be white but the microbes that grow in and on their body change their colour, the colour of their milk and how it tastes. The dairy industry keeps this a secret as when they were introduced as 'tasty cows' in the 1930s (partially to liven up the Depression), people were very skeptical of having microbials alter their beverages and the long term consequences of drinking such milk - not that there are any consequences. Thus to keep consumer rates high, they avoid admitting the truth behind flavoured milk.
