What would writing a paper in college be like for Mathematics? How extensive would it be? Do you recommend writing one for those interested in Ph.D school for the major?

Do it if you want a PhD. In Europe it is necessary to even progress to a masters. You usually just do a literature review with small extensions and detail filled in, numerical simulations, or you might be able to prove some low-hanging fruit elementary problem with supervisor help. For mine I generalised some mathematical physics results of my supervisor. For a statistics paper it is easy, just get some data on something and shithouse your way through it = new result.
