I did take Probability, Data Structures, and Computer Architecture.
I am going to spend this summer doing numerical analysis for my Physics professor, hopefully that will translate into a marketable skill

It's a crapshoot. Too few positions and way too many applicants and fairly low job security for new hires.
That point aside, you'd want to down the probability route instead. Self study material on mathematical finance and market structure if courses are unavailable. Study for the interview process.
