Maybe be ready to tell stories of times that you had to learn something new that was tangentially related to stuff you already knew, and did so gracefully, but don't get yourself stressed out trying to cram. You can, however, demonstrate some curiosity on the subject, and there's lots of great advice ITT for that.
I think diving in on a new design from scratch might be a bit much, but you can certainly download the eagle or KiCad files for the Arduino or something and have a look around. First try to understand what you're looking at, then try to understand why it is the way it is. Similarly, you might want to learn how PCBs are fabricated and assembled, at a very broad and shallow level.
