I was the best scoring person in my high school at probability and stats which is thank god the last time I've taken it.
What filtered me was how dry and application based it was even for a highschool level course, literally feels like a science to me.

Random variables are very real mathematical concepts and they are absolutely all the damn time by applied mathematicians. Stochastic techniques are literally the way forward in computational math and there is a lot of rigor behind why any of it, including pseudo random number generation, works.

He's not talking about the mathematical theory behind statistics, that's math obviously, he's talking about statistics as a discipline. There's a difference. Statistics as a discipline is applied, just like engineering and computer science, the actual mathematical theory (i.e. how all the distributions themselves are derived and so forth) is just mathematics.
