One could at least in theory transform energy into antimatter and then trade that antimatter. You would lose a lot in the process but the density would still be pretty high.

You don’t use a consumable good like electricity as a unit of currency. Trade and commerce and long-term investment can only happen with a stable unit of exchange. Electricity credits would depend on how much electricity is produced and demanded at the exact second you go to buy your coffee, and all electricity would need to be centrally tracked (even solar panels on your roof) to get a single value nationwide, otherwise your credits are worth more in Kansas than in Michigan, etc.
