How rigorous or respectable would math knowledge gained from a CS degree be compared to a real math degree, or an engineering degree?

Math courses:
>Mathematical Foundations
>Linear Algebra
>Differential AND Integral Calculus
>Numerical Analysis OR Numerical Methods
>Statistics for the Sciences OR Introduction to Probability
and then the computer science courses on discrete math and algorithms and all that stuff

is there any specific math course not on this list that would complement a CS degree?

depends on your program, but based on your list, yours is much closer to an engineering program than a math program.

All math at the undergrad level is broadly useful in CS, but here are some of the most immediately useful:
Combinatorics (upper div)
Linear Algebra (upper div, proof based)
Abstract Algebra
These are only a very few, but a proper understanding of these will take you very far, both in math and CS.
Also a lot of great, applicable stuff in CS depends on understanding more calculus. You should take vector calculus and have a working understanding of ODEs at the very least.

it should suffice at your level, yes. The rest of the relevant calculus can be picked up alone, depending on whether or not you want to do graphics, robotics, computational physics, etc etc..

is there a set way of progressing through these things?

i have some rusty grade 12 math knowledge and i guess the calculus and linear algebra i took years ago

could i jump right into the combinatorics or math logic books after going through this book on proofs?

yes, there's really no other way to learn or relearn math except to do it. Do the exercises. Try and think of some to do yourself.

Discrete math or combinatorics would be a good first step to real math. Writing proofs is a lot like writing a program and would be a good skill to build.
Then once you know how to read and write real math a good course on Linear Algebra, and Numerical Analysis would set you up to apply mathematics to the computer. Abstract Algebra if you would like to study cryptography. Differential Equations for simulations and modeling, which is what I do. Advanced Numerical Analysis/Methods for optimization or machine learning.
Book of Proof is a good choice as other anon mentioned. Get straight into the action with Axler’s Linear Algebra Done Right to learn proofs and linear algebra at the same time.

to *start* with? hard to say, except maybe Knuth's Concrete Math. Combinatorics is one of those subjects where the introductory material doesn't help you tackle the harder stuff AT ALL.
I think the closest book is probably van-Lint/Wilson, which you can find here:

The issue is that you want to be comfortable with basic pure mathematics. It requires a lot of maturity to get through even though it "looks" basic - really that's just combinatorics as a subject.

For numerical analysis, I think it's best to dive into books after you've had some experience with the material. You use numerical analysis books to learn about specific methods you're interested in. You learn how to solve problems with numerical analysis with two activities: one, you learn more pure math to hone your ability to solve the problems. Two, you read papers and notes in numerical analysis problems as case studies to learn what people have done and how.
You should start by learning the basic methods people have made and how they're done. Here are two great resources for that:

2019:
https://ocw.mit.edu/courses/mathematics/18-335j-introduction-to-numerical-methods-spring-2019/
The 2012 material has more guided notes like a textbook, while the 2019 version has a much more varied base of notes, resources, and *implementation* exercises to complement the theoretical ones. I recommend using both.
