Lex is being liberal with words but he obviously doesn't think there are close to infinity organisms that have existed considering that doesn't even make sense. Clearly is just trying to say that the number of organisms that have ever existed is so large that it feels like infinity to a human.
And that last observation by Elon is basic, sure, but these guys aren't biologists by training. I made the realization we are "walking colonies of cells" in high school and it freaked me out and made me like biology so much that I majored in it and I'm starting my phd soon. It is genuinely fascinating thought.
I see nothing wrong with e-celebs talking shit on twitter and getting the kids interested in science.
