Probably because QCD is a part of a same theory that also describes electromagnetic radiation (i.e light) even though color charge has nothing to do with light.
It's calling something inside a car a "wheel" even though it nothing to do with wheels.

The picture in OP is part of what I consider pop-sci. There are three color "charges" and gluons are a color and anti-color, and all that. It's just a terrible depiction of how a gauge theory works that will end up confusing people when they start studying it for real. People hearing this think that there is a plus or minus "red charge" and wonder why there are 8 gluons instead of 9 and all that. It's just bad to single out the 3 in the fundamental representation and have that be what you present to the public. We don't talk about electromagnetism in pop sci in terms of phase, which is the closer analogy to the 3 colors.
