My guess would be digestive fluids mixed in with your saliva. Acids probably affect the crystalline structure a good amount.

unless you have pure water and a clean, insoluble surface to look at it in the microscope, you will find crystals, regardless where your sample is from. it's super normal and so common that there's hardly any exception
the pattern itself is too complex to answer because there are too many different chemical compounds in the sample.
