Are physicists just mathematicians who preferred philosophy over the minute details of math? It seems like most mathematicians are extremely anal about precision for their mathematical models, vs. Physicists who care about the generality of a model. Is it because physicists are smarter and more cognizant?

Physics isn't just theoretical physics - there's plenty of physicists who are really bad at math.

I wouldn't say that

That's not a central desire.

So to draw a line: The task and time spent on topics is different in the two disciplines. Physical topics go out of fashion quicked (say they hold for 10-20years in long cases), while in math the times where a topic is of interest is longer. If a physics math topic stays around longer, it will be considered pure math eventually, and the people be ridiculed for not actually doing physics.
Physics connects to data science and data evaluation. And for this reason, a topic can also be scraped (which doesn't happen in math - mathematical questions stay alive forever/until answered - they don't turn out to be bogus/irrelevant questions)
Physicist allow themselves to stay in symbolic mode for far longer, and in some cases conclusions can be derived symbolically (without afterwards cleaning up and forming a consistent theory around it), and then it can happen that the physics theory is left behind without having answered all questions (especially the mathematically formal ones) about said theory
