Trigonometry is used for calculating distance between things. To detect collisions. If you use top down view, trigonometry can turn your overall speed into x and y speed. If you throw mobs into the air and they spin, trigonometry tells you where their head and legs end up being.

sin(Theta) is a function of theta.
theta is angle between two lines of a triangle.
The third line just connects the two lines.
the value of that function is equal to the ratio of two sides of that triangle.
How did they discover these things?
Well first they measured all values and then a set of patterns and rules were conceived.
Why are these rules important?
triangle geometry and phenomenon behaving like these rules are common in physical reality.

Rotation mostly. Space in games is defined by vectors using X and Y units. The trig functions show how the amount of X and Y used (the lengths) change based on the angle between. If you look at a unit circle this is more obvious.

Space and measurement is arbitrary. So if your new unit is different, your measurements change. With the original units it may be 3 of one axis and 4 of the other. But now its -5 of the first and -6 of the second. Etc

Even if the trig functions were arbitrary the wave pattern is also nice when you want to vary something periodically like light level
